I’m a grab and go type of girl when it comes to my daily breakfast routine. During the week, I try to keep it healthy and enough so I’m not starving 30 minutes later. These Blueberry Protein Powder Muffins are perfect to make on a Sunday to last at least the first half of the week – perfect for grabbing on my way out the door.
I used regular sugar, the alternative sugar options weird me out a bit. Keep it natural. Let’s be real here, I already chug my protein shakes every morning, I’d like my breakfast to at least be somewhat tasty, ya heard? One muffin = about 134 calories.
1¾ cups whole wheat flour
1 scoop vanilla protein powder (I used ETB)
1 tbs baking powder
¼ cup sugar (or your choice of substitute)
¼ cup brown sugar
¼ tsp salt
1 cup unsweetened applesauce
4 large eggs
1 tsp vanilla
1½ cups fresh blueberries
Preheat oven to 325 degrees.
Combine flour, protein powder, sugar, brown sugar, baking soda and salt in a large bowl. In a separate bowl, mix applesauce, eggs and vanilla. Add to the flour mixture and mix together well. Fold in blueberries.
Pour batter into a greased muffin pan and bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean. Cool for about 10 minutes.
