I’ve been trying to eat healthier, in general, but especially so running isn’t so torturous. What I eat does impact how I feel and perform, do you ever feel that way?
Even though we’re getting a bit of a heatwave right now in Virginia….in the smack dead of winter (it’s supposed to be in the 50s most of this week), I still think Chili is a good idea, especially when you stock it full of yummy veggies:
Hearty Chili Recipe:
3 tablespoons olive oil
1 diced medium onion
1 diced green bell pepper
1 can of kidney beans, undrained
1 can of black beans, undrained
1 can of cannellini beans, undrained
2 cans diced tomatoes, undrained
1 cup frozen corn
2 tablespoons of taco seasoning
1 lb of lean, organic ground beef or turkey
Heat olive oil in skillet, sauté onion, pepper and corn until golden brown. Remove from pan and into a separate bowl. Add ground beef and cook until brown. Drain.
Add all ingredients to a large pot. Cook on medium heat until comes to a boil, reduce to medium-low heat. Cook for 45 minutes to one hour.
I highly recommend cooking this a day ahead and refrigerating over night before enjoying. The flavors really come out the next day.
I always cook my chili with taco seasoning, may sound weird, but don’t knock it til you try it! Any other seasoning you wanna try, go for it.
