My New Favorite Spring Salad

Eating healthy. Working out. Drinking water. Skipping dessert.

Skipping dessert???


Last July, I started running and eating better to run my first 5K. Since running my first 5K and not dying, I decided to keep up the journey on better health and workin’ on my fitnesssss.

I don’t run as much as I used to. Not a huge fan of it and wasn’t really seeing many results from it after 7+ months of running regularly. I now spend a lot more time in the gym and on the stairs….and skipping dessert. Sigh. I seriously have a weakness for warm, soft cookies.

I found some creative ways to eat healthy without torturing myself. This Spring Salad is one of my favorites:

Spring Salad Recipe


Handful Blueberries or sliced strawberries
1 tablespoon Feta Cheese
1 – 2 tablespoon Almond Slivers
One avocado (sliced)
Small handful Baby bella mushrooms (diced)

I don’t really measure, just add as much as I like and mix together. This salad really doesn’t need dressing and in my opinion, seasoning either. There’s so much flavor with all of these ingredients, I just eat it as is. Yum!!
