You Are What You Eat


….or something like that. Because let’s face it, if that was true I’d be one big cookie and mac n’ cheese noodle. Half and Half probably.

Then I discovered what I eat really does impact me, especially my running.

You may have read where I’m participating in my first 5K soon and been running, more like forcing myself to run, to get ready.

I’ve always had somewhat of a “golden rule” to eat pretty healthy during the week, watch the sugar, less carbs and then splurge a little on the weekends. Then I started this whole running thing and the same ol’ diet hasn’t been cutting it. If I’m going to work this hard at running, hey, I wanna see some kind of results. Can a girl get some defined leg muscles?? Amen.

So, I’m attempting to eat a lot healthier during the week, being a little tighter on the “somewhat no carbs, sugar rule” and hopefully, not making running so terrible on myself.

Fair warning: I’m not the best at following recipes. I get bored and improvise sometimes a lot. There are a few recipes I’ll follow almost exactly but my mom has always been someone who made up her own recipes rules along the way. So, guess who does that too. Below are a couple of healthier recipes I’ve been trying lately.

1 Cup of Frozen Fruit (I do a mix)
Small Handful of Spinach
1 Scoop of Vanilla Protein
1/2 Cup of No-Sugar Added Blueberry Juice

Mix all in a blender and yumm.

Rice Mexican Rice Bowl

1/2 cup of Spring Mix (or your favorite leafy greens)
1 cup of brown rice (cooked)
1/2 can of black beans (drained and rinsed)
1/2 small sweet Onion, chopped
1 clove of garlic, chopped
1/2 red pepper, chopped
1/2 green pepper, chopped
1 tablespoon of olive oil
1/2 tomato, chopped
1/2 tsp of cumin
Salt & Pepper to taste

Heat olive oil in skillet. Add garlic, onion and peppers, cook until slightly brown. Add beans and heat through. Add cumin, salt, pepper and cilantro. Mix well. In a bowl add spring mix, rice and veggie mixture. Top with tomato.

Annnnd then top with all the cheese! Ugh. I kid. I didn’t have avocado on hand but I’m sure that would be tasty on top too. Since it’s garden season, I opted for fresh garden tomato, if you have fresh salsa though, I’d vote that way too.
